whole wheat peanut butter cookies
A lot of people don't like peanut butter cookies. Well, those people should just move right along, because I love peanut butter cookies, and I'm here to spread the good word about one of my favorite recipes. Long live the peanut butter cookie!
This recipe makes approximately 35-40 small cookies.
Note: Set out the egg and butter ahead of time so that they can reach room temperature.

Beat butter, sugar and vanilla together until whipped and light in color.
Add peanut butter and mix until combined.
Add eggs, one at a time.
Sift together dry ingredients and add to creamed mixture, mixing until just combined.
Bake at 180° C 350° F for 10-12 minutes, or until cookies crack slightly on the top. Let cool completely before removing from sheetpan.
