whole wheat chocolate bran muffins

Not as healthy as the other bran muffins, but this recipe is a bit more sneaky when it comes to getting a little extra fiber in your diet!

 

Recipe makes approximately 12-15 muffins, depending on size.

ingredients

  • whole wheat flour 160 g
  • wheat bran 25 g 1 ounce
  • sugar 225 g 8 ounces
  • cocoa powder 45 g 1.6 ounces
  • baking soda 1 teaspoon
  • corn starch 1/2 teaspoon
  • salt 1/4 teaspoon
  • water 225 g 8 ounces
  • vegetable oil 75 g 2.75 ounces
  • egg 1

Sift together dry ingredients in a large mixing bowl.

Add water, vegetable oil and egg and mix with dry ingredients.

Scoop batter into muffin cups and bake for 20-22 minutes at 180° 350°.
